Type of grape: 100% Old grenache
The grapes, from old vines with a mean age of 45 years, were harvested by hand at the optimum moment of maturity during the first half of September. The grapes are destemmed and covered in stainless steel tanks for alcoholic fermentation at a controlled temperature (around 26ºc) for 10 days to achieve the expression of the varietal character. At the end of the fermentation and after a maceration of about 15 days is uncovered. We use only the wine from the bleed and once the malolactic fermentation is finished the wine is put in American oak barrels for 3 months to achieve greater aromatic complexity, always seeking the predominance of the fruit. Tasting note: Color, cherry with tones tiled. Intense aroma, with notes of ripe fruit, fine toasted touches and reduction features. In the mouth, expressive and persistent, with round and balanced tannins, and with a sensation of fresh acidity, which makes it a wine with character and augurs a long-lived future.
It is recommended to serve at a temperature of between 14º and 16ºC
